Ingredients:
  • 8 slices 100% whole grain bread- WIC Approved Item
  • 1 15-oz can of peaches packed in juice or water, drained- - WIC Approved Item
  • 8 slices low-fat cheddar cheese- - WIC Approved Item
  • 7 1/2 cups spinach- - WIC Approved Item
  • 4 teaspoons vegetable oil
Directions:
  1. Heat the 4 teaspoons of vegetable oil in a large non-stick pan over medium heat. 
  2. Place 4 slices of whole grain bread in the pan. These will be the bottom slices of your sandwiches.
  3. Layer the ingredients on each slice of bread in the following order: one slice of cheese, a handful of spinach, 4 to 6 peach slices, another slice of cheese, and finally, a slice of bread to top it off. You can get creative with the arrangement, making sure to evenly distribute the ingredients.
  4. After 4 to 5 minutes, carefully flip each sandwich using a spatula. The bread should turn golden brown and the cheese should start melting.
  5. Cook the sandwiches for another 4 to 5 minutes on the other side. This will ensure that the cheese is fully melted. 
Notes:
  • Feel free to experiment with other leafy greens, such as arugula, to add a different flavor and texture to your sandwich. It's a great way to personalize the recipe to your liking.
